I don’t know about you, but sometimes I get bored by a side dish composed of just one vegetable. Move over steamed broccoli, we’re cooking ALL the veggies today!
This is the best kind of ‘clean out the fridge’ dish. It’s quick, easy, healthy, and delicious – AKA everything you could ask for in a weeknight side dish recipe! We only need a few basic spices to make the fresh flavors of these veggies really pop. There’s something about roasting vegetables that brings out their natural flavors so well, especially when broiled to get a nice char.
I love making this dish for my family for dinner alongside some sort of protein and starch. It’s ultra-versatile so you can pair it with just about anything. My go-to’s tend to be chicken or fish and rice or potatoes. This recipe makes enough to serve the whole family, but if you’re cooking for one then it’s perfect for meal prep so you have enough to last you a week. Now, let’s get into the good stuff!

  • 1 head cauliflower
  • 1 head broccoli
  • 3 medium-sized carrots
  • ½ red onion
  • 1 bag baby corn
  • 8 oz mushrooms
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt


  • Wash and chop all vegetables to your preference, making sure they’re relatively even in size to ensure evenly distributed cooking. Transfer vegetables to a greased baking sheet.
  • Mix the spices together in a small bowl.
  • Drizzle oil over vegetables, then sprinkle the spice mixture on top and toss to evenly coat.
  • Broil at 550°F for 6 minutes on the top rack in the oven.
  • Note: If you’re making a smaller batch of vegetables, reduce the amounts of your spices accordingly.
