The Best Oven Roasted Vegetables

The Best Oven Roasted Vegetables

Healthy, flavorful, and roasted to perfection! These are just a few of the ways to describe the Best Oven Roasted Vegetables. Say hello to your new favorite easy side dish, ready to eat in under 10 minutes.
I don’t know about you, but sometimes I get bored by a side dish composed of just one vegetable. Move over steamed broccoli, we’re cooking ALL the veggies today!
This is the best kind of ‘clean out the fridge’ dish. It’s quick, easy, healthy, and delicious – AKA everything you could ask for in a weeknight side dish recipe! We only need a few basic spices to make the fresh flavors of these veggies really pop. There’s something about roasting vegetables that brings out their natural flavors so well, especially when broiled to get a nice char.
I love making this dish for my family for dinner alongside some sort of protein and starch. It’s ultra-versatile so you can pair it with just about anything. My go-to’s tend to be chicken or fish and rice or potatoes. This recipe makes enough to serve the whole family, but if you’re cooking for one then it’s perfect for meal prep so you have enough to last you a week. Now, let’s get into the good stuff!

  • Drizzle oil over vegetables, then sprinkle the spice mixture on top and toss to evenly coat.
  • Broil at 550°F for 6 minutes on the top rack in the oven.

Serving and Storage Tips
● To ensure the veggies are cooked evenly, rotate the pan or toss the vegetables halfway through cooking.
● For the best results, don’t overcrowd the pan!  Make sure that all the vegetables are spread into one even layer.
● You can pair this versatile dish with anything you like. Some of my favorite accompaniments are baked chicken breast, grilled chicken thighs, baked salmon, steak, crab cakes, rice, and roasted potatoes.
● Want to switch up the veggies? Try adding zucchini, brussels sprouts, bell peppers, or cherry tomatoes.
● If you like a little heat, try adding a pinch of cayenne powder or crushed red pepper to your spice mix before tossing with your vegetables.
