Growing up, my mom always used to make veggie rice just like this, but with real rice. Don’t get me wrong — I love my rice. But I’ve also been trying to cut back on carbs lately, so I tried substituting the rice in my mom’s classic dish with cauliflower rice and I was seriously impressed. With all the vegetables cooked into the rice, it’s nearly impossible to tell that it isn’t actually rice!

What You’ll Need to Make Cauliflower Veggie Rice
To make this flavorful Cauliflower Veggie Rice, you will need cauliflower florets or frozen cauliflower rice, bell peppers, carrots, green beans, onions, fresh garlic, green onions, salt, and the oil of your choice. You can keep it simple with olive oil or avocado oil, or for an Asian twist, use sesame oil.
If you’re making your own cauliflower rice from fresh cauliflower florets, you will need a food processor. The only other kitchen tools you will need for this recipe are a medium-sized pot and a large skillet. Nice and easy! I’m all about recipes that don’t require a million different cooking tools, because the cleanup involved with those tends to be a nightmare. This Cauliflower Veggie Rice recipe is super easy both to make and to clean up after.

Equipment

  • food processor
  • medium sized pot
  • large skillet

Ingredients
  

  • 5 to 6 cups cauliflower florets (or 24 oz of frozen cauliflower rice)
  • cups chopped bell peppers
  • 3 small carrots peeled and grated (1 cup)
  • 2 cups chopped green beans
  • 1 small onion diced
  • 3 cloves of garlic minced
  • 1 tbsp oil
  • 2 green onions thinly sliced
  • salt to taste

Instructions
 

  • If you’re making your own cauliflower rice, add your cauliflower florets to a food processor and pulse until rice has formed.
  • Blanch for one minute in boiling water, then drain and set aside over a paper towel to dry.
  • If you’re using frozen cauliflower rice, skip the first step and start with the second.
  • In a large skillet over medium heat, add oil and sauté onions until translucent.
  • Add in garlic and stir for 1-2 minutes until fragrant, being careful not to let it burn.
  • Add the green beans and let cook for 1-2 minutes before adding carrots and salt, then cook for an additional minute.
  • Add in bell peppers and let cook for 1 minute before adding your cauliflower rice and green onions. Combine completely, then remove from heat.

Notes

Serving and Substitution Tips
  • You can add any protein you like to make this a complete and well-balanced meal.  Some of my favorites are chicken breast, ground turkey, and tofu.
  • To turn this recipe into a healthy fried rice, you can add a few tablespoons of soy sauce, a dash of sesame oil, and even a scrambled egg.
  • You can mix it up and add any veggies you have on hand for the ideal ‘clean out the fridge’ meal.  Other veggies that work great are broccoli, zucchini, snap peas, and edamame.
  • If you love spicy food, add in some sriracha or crushed red pepper for a kick.
