Welcome to Simply Healthy and Delicious!

My name is Amanda and I’m thrilled to have you here. I have a deep passion for cooking, food photography, and sharing delicious meals with my loved ones. My family and friends always enjoy the meals I cook for them (or so they say...haha!). So I created this blog to share my cooking style and recipes with all of you.

My mother started to teach me how to cook ever since I was 7 years old. I was immediately hooked. I haven’t been able to put the spatula down since! I focus mostly on healthy versions of classic Caribbean and other international dishes that my family and I enjoy. While most of my dishes are on the healthier side, I still love the occasional indulgence.
Originally from Trinidad and Tobago, I have lived in the USA for over 15 wonderful years. I am married to the most amazing man, with whom I share two beautiful daughters; aged 5 and 3. My husband is originally from Eritrea, so our home is incredibly diverse; especially when it comes to food! While neither of us is very traditional, we love to create healthy versions of the mouthwatering dishes from our homelands.

I believe that in order to thrive in today’s crazy world, you must bring your whole, authentic self to the table. Your personality, sense of humor, and most importantly — your heart.
